The Michael Moroney-trained gelding ($7) was a fast-finishing winner ahead of Another Prelate ($4.60).
Regular Aussie ($17) nudged out Meteor Shower ($16) for fourth.
Pre-race favourite Murdoch's Joy, trained by hometown hope and 10-time cup winner Brian Cox, had every chance but finished seventh. Cox's less-fancied chances, Minnie Downs (fifth) and This Cat's Magic (sixth) fared slightly better.
Nolen, famous for partnering champion sprinter Black Caviar, drove Zabisco through the centre of the track, making the most of the solid pace set early by Brillanconi (11th).
Five-year-old Zabisco started his career in Moroney's home country New Zealand before settling in Melbourne in March this year.
