The stolen blue Mitsubishi Magna came speeding west out of Wantigong Street and collided with the KW & S Coon delivery truck heading south on Mate Street just before 4am.
The impact forced the eight tonne truck to flip onto two wheels, twisting its cabin, squashing its fuel tank and bending and cracking its chassis.
Much of the milk cartons inside were destroyed and the driver suffered a minor head injury.
The two men in the Mitsubishi Magna fled the scene on foot, abandoning the extensively damaged vehicle.
Albury firefighters attended the scene as fire protection and to clean the spilt fuel.
