The woman, 65, sustained facial and possible spinal injuries when she was flung over the handlebars of the bike.
Police said she had been riding through long grass on a West Wodonga property when she struck a concealed object.
Emergency services were called to the Green Hill Road farm just after 9am.
The woman was immobilised and taken in a serious but stable condition to Albury hospital.
Scans will determine whether she is taken to Melbourne.
Worksafe is investigating the incident.
