Mathew Rivett, 27, remains in Albury hospital recovering from a collapsed lung, cracked ribs and a fractured eye socket.
Mr Rivett had been working a shift at the hotel when he asked a man to leave the upstairs One Nightclub about 11pm because he was not wearing shoes.
Another man had approached and punched him, before kneeing him to the head and pushing him down a flight of stairs.
One Nightclub and marketing manager Bernard Zamiara said the Sunday night had been successful up until that point.
“It was just within the last half an hour that things turned sour,” he said.
“This person ruined the night.”
Mr Zamiara said no one expected to go to work and be assaulted.
“Mathew was just doing his job, and while he works for a security company and not us, the hotel staff are concerned about his wellbeing,” Mr Zamiara said.
“He has prescription glasses that were broken in the fracas that need to be replaced immediately.
“WorkCover will cover most of his costs, but he will have out-of-pocket expenses before that kicks in, and that’s where we want to help.”
The fund-raiser will kick off tomorrow night with a seafood raffle and continue all weekend with a tin rattle.
The Bended Elbow will match the money raised dollar-for- dollar.
Mr Zamiara visited Mr Rivett in hospital on Tuesday.
“He was in reasonably good spirits and he’s not holding a grudge against anyone,” he said.
