Police have been told not to approach father and son duo Gino and Mark Stocco, who are considered armed and highly dangerous.
The last confirmed sighting of the men was at a Euroa service station on Monday.
Chairs and camping equipment were in the back of a stolen Toyota Landcruiser the men are using.
Officers believe the men, who have been wanted for eight years, were involved in a shooting during a police pursuit at Mangoplah.
Police tried to stop a Nissan utility on Friday afternoon.
It sped off and a bullet was fired into the front grill of the police car.
A second police vehicle was shot at a short time later.
The Stoccos are believed to have stolen the Landcruiser with number plates BV70WP at Little Billabong near Holbrook overnight on Sunday.
The four-wheel-drive has distinctive white bull bars and was later seen by a member of the public at Euroa.
The men were caught on security cameras filling up the vehicle and paying for the fuel before leaving about 6.30pm.
They were thought to be heading north but their location is unknown as a major police operation seeks to track them down.
Police from Benalla, Wangaratta and Wodonga set up in the centre median strip of the Hume Highway on Monday night but did not see the vehicle.
Officers are warned against approaching the men or their vehicle and to use extreme caution amid concerns they will again shoot at officers.
An arrest plan was being formulated on Tuesday should any police members encounter the pair.
