The trio targeted the Wodonga venue last Monday and used tools to smash through the front doors to enter.
They stole a backpack full of bourbon cans and coins from poker machines during the two-minute spree.
The incident was caught on some of the 20-odd cameras inside the venue and police hope the footage will lead to information.
General manager Phillip Kelly said staff were fearful about the possibility of another break-in.
“I think it’s important to catch them to put everyone’s mind at rest,” he said.
“In light of the fact quite a few other venues have been targeted in the last few weeks means a lot of the venues in the area are more on edge.
“We’ve ordered more cameras to be installed on the outside of the building to know which way people are approaching and leaving.”
The offenders – possibly two men and a woman – wore gloves and covered their heads.
One wore a backpack on the front of their body.
They left with about six hoppers from the gaming machines which contain $1 coins and the alcohol.
Detective Senior Constable Ian Deverell said the group were likely to be local as they knew their way around the venue.
“I believe they know the inside of the Stump Hotel and have been there before,” he said.
“It’s definitely a targeted offence.
“It was a well-planned offence.
“Unfortunately when these sort of incidents occur they impact on the victims quite severely.”
Detective Senior Constable Deverell said police had not made links to other break-ins in the region in recent weeks.
Wodonga and Thurgoona golf clubs have both been targeted.
“We know a car was seen at the premises,” he said.
“It could have been the car involved, we're unsure.
“We hoping someone from the public may have information about this particular offence and can come forward.”
