The official caterer for the Albury Gold Cup Fiona Landy has it down to a fine art after 11 years trackside for the city’s biggest event on the racing calendar.
Her team of 36 staff prepared about 800 meals on Thursday and Friday for the official Albury Gold Cup Committee marquee, the ladies luncheon and corporate boxes as well as canapes for marquees.
They also operated the public kiosk and barbecue marquee for thousands of racegoers.
Ms Landy said the official lunch menu reflected Border produce.
“We served a Tex-Mex chicken entree, porterhouse with a quinoa, sweet potato, beetroot and pomegranate salad and Willowbank potatoes,” she said.
“The marquees will have pork belly and watermelon salad, terrines, chicken and leek pies.”
Ms Landy said the public kiosk served hundreds of kilograms of chips, hundreds of dim sims, sandwiches and hot dogs.
“The barbecue will serve hundreds of steak sandwiches, pork belly rolls with coleslaw and hamburgers,” she said.
Ms Landy said Albury Gold Cup was her busiest day of the year starting about 7am and finishing after 6pm.
She has been catering throughout the Border and North East for three decades.
