American barbecue with authentic Australian overtones is cooking up daily at the High Street establishment.
Homegrown owner/operators Steve and Lyn Henderson together with their daughter Kim and her husband Matt Frauenfelder, who is the head chef, took over the popular watering hole six weeks ago.
Having a history in hospitality, Frauenfelder realised his next food venture when he went camping with his mates.
“I was out bush with friends, doing rustic and earthy-style cooking,” he said.
“When I came home I started researching American-style barbecue but I wanted to put an Australian spin on it like Banjo Lamb and some pork dishes.
“We built a 1.2-tonne hot smoker out of recycled materials from the family farm at Bonegilla.”
Having grown up on the Border and previously working in Adelaide, Matt and Kim wanted to raise their children – Jordon, 15, Blake, 12, and Evan, 11 – in the country.
Formerly a partner in the Birallee Tavern in Wodonga, Frauenfelder continues to work in research and development for Kooka Brotha’s Patisserie.
He is relishing his new role at the Top Pub, which was built in 1863.
It will launch Two Pot Brewing Yackandandah off-site during October.
“Once it’s up and going there will be a brewery presence on-site too,” Frauenfelder said.
The Star Hotel stocks 18 different craft beers including Bridge Road Brewers, Bright Brewery and Rutherglen Brewery labels.
