McCarthy was named in last year’s team only to pull out due to work commitments.
“I can’t wait,” McCarthy said before leaving on Monday.
“You get to meet new people, test yourself against some of the best in Country Rugby League so it is a good learning experience.”
McCarthy hasn’t been part of the Country Bulls line-up since 2010 and wasn’t going to miss out this time around.
“I jumped at the opportunity,” he said.
“The last one I went on was brilliant.”
Bulls’ halves partner Nathan Rose, winger Jack Lyons and front rower Hayden Jeans are also in the side.
Tumbarumba’s Robbie Byatt is in the centres, Junee’s Daniel Foley has been named on the other wing while Albury’s David Cowhan is at lock and Young’s Aaron Slater on the bench.
