Albury woman Jan Hancock and her daughter Loni have opened Saludos in the Dean Street building formerly occupied by Union Lane.
Having lost her husband Dan to illness in 2015, Mrs Hancock said it was the fruition of the family’s shared passion for Spain.
“It was always a dream for Dan and I to go to Spain,” she said.
“We had tickets and we were so close to going when Dan got sick.”
Trained in hospitality and a passionate cook, Mrs Hancock and her colleague Kristin Quinlivan researched all of the recipes for their menu.
“It’s our interpretation of contemporary Spanish and European cuisine,” she said.
Marketing graduate Loni said they offered red and white sangria and Champagne sangria in spring on top of North East wines.
Mum to Jak Hancock and Dylan Chapman, Mrs Hancock said she still planned to visit Spain.
“This restaurant is not a new chapter; it’s a brand new book!” she said.
Saludos will offer live entertainment such as Flamenco dancers monthly on Saturday nights.
What's your favourite dish?
Any kind of sharing platter, especially one with lots of variety and flavours and textures.
What are the staples in your pantry?
Chickpeas, smoked paprika, nuts, canned tomatoes.
What's the biggest product discovery you have made in cooking?
Protein powder in cookies, muffins and pancakes and yoghurt in hommus, soups, curries, dips and flatbread.
What's your secret vice?
Chocolate
What is your recipe standby?
Lasagne
What is your most unforgettable meal and where?
ARIA Restaurant (Matt Moran’s Sydney restaurant) because of the atmosphere, quality and style of food and service and, of course, my family as company.
What's your favourite cooking utensil?
Food processor. I use it for pesto, hommus, making treats; my favourite treats at the moment are berry bliss balls.
What's in your kitchen toolkit?
Zester, knives, stick mixer, juice squeezer, measuring cups and a scale.
What did you have for dinner last night?
Pulled beef with hasselback potatoes and salad.
What are you drinking?
Hancock and Hancock Shiraz Grenache – and not not just because of the name!
