A Caltex petrol station will be joined by the Holbrook Bakery, a Zambrero store and Uncle Leo’s Roadhouse at the complex on the southern entry to the town.
Twelve will work at the Caltex, 15 to 20 at Zambrero, 12 at the roadhouse and five at the bakery.
Petrol started flowing on Wednesday with the bakery open on Thursday, Zambrero on Friday and Uncle Leo’s next Wednesday.
Uncle Leo’s, which will trade 24 hours, has only operated from a Caltex in the Sydney suburb of Glenfield previously.
The original Uncle Leo, Attilio Prestia, migrated from Italy in the 1950s and set up a roadside store.
His son Sam Prestia said his father, who died in 2007, had a vision to open across Australia and he sees the Holbrook diner spurring an expansion into Victoria.
The Holbrook Bakery, which traded at the site before the redevelopment, will retain its other shop in town.
