The co-owners of Pinchos Catering, Andiamo Street Food and Pop Up Supper Clubs in Junction Place have travelled to Europe and South America in pursuit of traditional flavours and tastes.
Reid said they spent 10 days in Argentina in August and would travel to Japan for the first time on Sunday.
“The Japanese have a street food culture with their bento boxes and the like,” she said.
“Argentina has a huge street food culture – 41 million people live there.
“We had amazing fried chicken at Buenos Aires restaurant Nola, which inspired our Dirty Bird Burger on the menu (buttermilk fried chicken, cheese, tomato and chipotle slaw).”
Andiamo Street Food offers predominantly rustic-style Sicilian fare in Wodonga while their catering business allows them to take their recipes on the road for corporate functions and weddings.
The couple now make their own gelati, Topolino Gelati, for their functions with plans to offer it on site soon.
What's your favourite dish, Andrea?
Carbonara. I make it with eggs, no cream, lots of pepper, Parmesan and cured pork cheek.
What are the staples in your pantry?
Saffron, balsamic vinegar, Parmesan, hot sauce and pasta; we have about a dozen varieties on hand.
What's the biggest product discovery you have made in cooking?
Wooragee mushrooms from Mr Mushroom. We used yellow, pink and grey oyster mushrooms on bruschetta for a function recently. They were amazing.
What's your secret vice?
Mozzarella
What is your most unforgettable meal and where?
Potato and Parmesan ravioli in Alba, a town in Piedmont, Italy, famous for their white truffles.
What's your favourite cooking utensil?
Definitely not a Thermomix, I don’t have one. Probably my probe thermometer.
What's in your kitchen toolkit?
KitchenAid
What is your recipe standby?
Piadina, it’s an Italian flatbread from the Romagna region.
What did you have for dinner last night?
We catered for a function at Rutherglen. Afterwards I had a toastie with mozzarella and ham.
