The Albury couple behind Mexican restaurant South Cali Cantina, Ben and Mel Blomeley opened DinDins in Townsend Street on Friday night.
Mr Blomeley said his head chef Albury born-and-bred Andrew Scott had a flair for Asian fare.
“We’ve fitted it out but his food is going to fill this place,” he said.
“We’re referencing Chin Chin, Supernormal and Mr Miyagi, not copying them.
“DinDins came from what we called dinner growing up at home.”
A former Albury High School student, Scott trained at Albury eateries Adamshurst Restaurant and Function Centre and Electra Cafe before he travelled to Sydney as part of a David O’Dea Scholarship.
He worked at hatted restaurant Sepia, which served Japanese-inspired dishes, and later in a French-inspired Japanese restaurant in Tokyo.
DinDins’ Share Me dishes include mushroom, ginger and wombok spring rolls with pickled ginger aioli; sticky Korean fried chicken; and bao (Chinese steamed buns) with char sui pork, crisky chicken Karaage or spicy fried tofu.
It seats 120-plus and services Quest Albury on Townsend.

It’s usually pretty empty but generally enough ingredients to whip up a Sunday feed.

Each venue and menu has its own central flavour so it changes all the time.

So many great ones but a lot of new experiences while working in Japan.
