Melbourne’s Savour Chocolate School director Tibballs will share her expertise with patisserie students during 2017.
Albury business Geoffrey Michael Patissier owner Geoffrey Michael is also back on board for his third year.
Wodonga TAFE’s cookery teacher Sarah Whitling said she was thrilled with the offering for 2017.
Ms Whitling said Wodonga TAFE was the only provider in the region to deliver the Certificate qualification.
“This is an amazing opportunity for anyone wanting to study patisserie,” she said.
“It’s not often that we have two prestigious guest chefs teaching our very own students.
“Students will get to create their own masterpieces under the guidance of world-renowned chefs; it doesn’t get much better than that.”
As dessert specialists such as Adriano Zumbo and Anna Polyviou take the stage to show their talents, more people are choosing a patisserie qualification.
Students will learn in Wodonga TAFE’s purpose-built kitchen, which has had a renovation in recent weeks.
Geoffrey Michael will teach students the tricks of the trade as they create his chocolate Eiffel Tower and macarons as part of their Certificate III in Patisserie.
Students will have an opportunity to display their new skills at a high tea in The Valleys Restaurant at the TAFE during October.
One of Australia’s most celebrated and internationally respected pastry chefs, Tibballs will host an exclusive chocolate and petite gateaux masterclass for students in June.
Tibballs represented Australia at the World Pastry Championships in Las Vegas where she was recognised as the best in the world for her handmade chocolates, as well as winning gold in the Pastry Olympics in Germany.
She has also been a judge at the World Chocolate Masters in Paris, The Patisserie Grand Prix in Japan and The World Chocolate Masters National selections in London.
She makes regular TV appearances on Everyday Gourmet with Justine Schofield and has presented numerous chocolate challenges on MasterChef.
Ms Whitling said a recent graduate of the patisserie certificate had opened a patisserie and cafe at Rutherglen named Zest Studio.
“They create some of the best cakes and desserts in the region,” she said.
“It really does show that you can build success in this industry in this region with the right skills.”
Wodonga TAFE is now taking enrolments for the Certificate III in Patisserie for 2017.
