Wodonga Rendering Pty Ltd has been charged by WorkSafe after the accident on March 9 last year.
Employees were emptying bags of blood meal into a semi-trailer using a forklift.
The forklift tipped, trapping a worker in the trailer.
A second employee was trapped between the trailer and forklift.
Both needed to be freed by emergency workers.
The employee trapped between the truck and forklift suffered a serious leg cut.
Both workers stayed overnight in hospital.
The company has been charged with failing to provide a safe working environment for employees, failing to provide a maintain a safe plant for employees, and failing to provide necessary information, instruction and training.
The business has previously been fined after an employee's face was slashed by an angle grinder.
A cleaner's hand was also crushed and her skin torn off and another cleaner's hand was caught in a conveyor.
Managers will face the Wodonga Magistrates Court next Tuesday.
