George Jones will open Pemberton Pantry in mid-May at 696 Pemberton Street.
“It originally opened as a general store in the 1930s and I’m returning it to that,” he said.
“There have been hairdressers operate here in between and it was last a grocer in 1985.”
Raised at Rand, Jones worked in hospitality in Sydney before he returned to the region four years ago.
Having been a barista for Campos Coffee in Sydney, Zebra Lounge in Pyrmont and Coffee Mamma in Wodonga, Jones said he was inspired to open his own business.
“The pantry will stock local produce that will feature on the cafe menu; it will be rustic and wholesome food in a convenient spot especially for those of us who live west of the main street,” he said.
Jones has installed counters from the former Seward handkerchief factory.
It will open for breakfast and lunch Tuesday to Friday and for breakfast Saturday and Sunday.
