The head chef at Bright Brewery for the past two years, Badrock said the eatery’s modern Australian menu complemented the brewery’s wide range of craft beer.
“We try to have our food matched to our beer,” he said.
“We use beer in some of our dishes like our Staircase Porter in our braises and stews and Alpine Ale battered bratwurst on our tasting plates and beer brisket sliders.
“We also use local ingredients like trout, goat and Milawa Cheese.”
Having trained at former Bright restaurant Lawler’s Hut and in Coffs Harbour, Badrock returned to Bright to run Lawler’s Hut before he operated Beanz of Bright with his wife Sarah for four years.
The couple have two daughters, Ella, 6 months, and Ivy, 3, the latter already a keen help at home in the kitchen.
What's your favourite dish?
Anything with an Asian twist. Bibimbap – a Korean dish – with kimchi, beef and a fried egg is a favourite.
What are the staples in your pantry?
Sixpence Coffee (Bright coffee roastery) beans, local sourdough, fresh fruit and veg and a never-ending supply of muesli.
What's the biggest product discovery you have made in cooking?
Saffron. It’s so versatile; I use it in lots of savoury dishes and sweet too.
What is your recipe standby?
Pasta. It’s easy to make because you’ve always got flour, eggs and salt in the house. I make it once a week with our daughter, Ivy.
What is your most unforgettable meal and where?
Salsa Bar and Grill in Port Douglas. The local produce is as fresh as you can get and the service amazing. We go up there every couple of years.
What's your secret vice?
Coffee
What's your favourite cooking utensil?
Over summer we barbecue every couple of days; for breakfast, lunch and dinner.
What's in your kitchen toolkit?
I’ve been a chef since I was 16 and I’ve never gone for gadgets. I’ve got a few good quality knives and couple I’ve owned since I was an apprentice.
What did you have for dinner last night?
Marinated pork fillet, fresh guacamole, cherry tomato salsa and tortillas.
What are you drinking?
