Albury woman Jan Hancock and her daughter Loni opened the Spanish and European eatery in August 2016 in the Dean Street building formerly occupied by Union Lane.
Having lost her husband Dan to illness in 2015, Mrs Hancock said it was the fruition of the family’s shared passion for Spain.
“It's amazing that we are coming up to almost a year since Saludos opened and we have been constantly making subtle changes,” Mrs Hancock said.
“Adding to our Spanish and European theme we now have Estrella Beer on tap, Spanish Champagne Cava and red and white Spanish wine together with local and Yarra Valley wines.”
Winter highlights are an enclosed courtyard and Spanish doughnuts churros, also available takeaway.
What's your favourite dish?
Empanadillas – our pastry encased stuffed olives, ham and Parmesan cheese – my new favourite – an excellent dish for people to try olives and believe me they will like them.
What are the staples in your pantry?
Chilli, sweet and smoked paprika, cumin, coriander, saffron, cinnamon and fresh herbs – coriander, parsley, basil, mint and thyme – some of which we grow in our restaurant courtyard garden.
What's the biggest product discovery you have made in cooking?
Perfecting churros – can't tell you exactly – it's a Saludos secret.
What's your secret vice?
Chocolate. I use it for relaxing, a pick-me-up, a stress relief or just because I see it!
What is your recipe standby?
Flourless Orange Cake
What is your most unforgettable meal and where?
Christmas 2015 at Noosa (the first Christmas after my husband, Daniel's passing) sitting on the apartment balcony eating grilled Morten Bay Bugs, oyster mornay and singing along to the Gypsy Kings with my family, while sipping on sangria.
What's your favourite cooking utensil?
Piping bag, an absolute must for our churros.
What's in your kitchen toolkit?
Piping bag, stick blender, zester, knives.
What are you drinking?
Vina Sol, one of our Spanish white wines; this wine goes wonderfully with many of our dishes.
What did you have for dinner last night?
Mushroom fettuccine; field mushrooms with white wine and garlic are so moreish.
