125g butter, chopped
160ml sweetened condensed milk
1tbsp golden syrup
250g packet plain sweet biscuits, crushed
45g desiccated coconut
375g packet Liquorice Allsorts, coarsely chopped
200g dark cooking chocolate, chopped
30g copha
Grease a 19x29-centimetre lamington pan with melted butter. Line the base and sides with non-stick baking paper. Combine the butter, condensed milk and golden syrup in a medium saucepan over a low heat. Cook, stirring for five minutes, until the butter melts and the mixture is smooth. Transfer to a large heatproof bowl. Add the biscuits, coconut and Liquorice Allsorts and stir until combined. Press the mixture into the pan and set aside for 30 minutes. Place the chocolate and copha in a heatproof bowl over a saucepan half-filled with simmering water. Stir over low heat until mixture is smooth. Pour the chocolate mixture over the slice and set in fridge for an hour. Cut into squares.
