Cheese and Greens Slice/Quiche/Pie
How to get greens into the kids!
2 onions or leeks, diced
1 head of garlic finely, chopped
2 bunches of greens (chard, spinach, silverbeet, broccoli), chopped
1kg fresh ricotta
50g grated Parmesan
4 tablespoons herbs (dill, parsley, thyme, mint)
Gently fry onions and garlic until translucent, add greens and allow to wilt down.
Set aside to cool.
Mix together all of the cheeses, eggs and herbs.
Stir in greens mixture.
Level off the mixture in a greased 20 x 30-centimetre Pyrex dish.
Cook in 180 degrees Celsius oven for about 45 minutes.
The mixture will puff up when cooked properly, then drop when it cools.
Serve with chutney and a salad of your choice.
Hint: Great cold in lunch boxes.
