After almost two decades of operating Subway eateries on the Border and North East, Jim and Linda Ainsworth wanted to bring the Mexican-style restaurant to Albury.

Mr Ainsworth said Mad Mex Fresh Mexican Grill combined the authentic flavours and spices of Mexico with the health-conscious cuisine of California.

Think tacos, burritos, nachos and quesadillas filled with roasted, grilled and slow-cooked meats, complemented by Mexican toppings and hand-made salsas. 

“Casual dining is growing in popularity; people are looking for places to take their family and friends out,” Mr Ainsworth said.

“We liked the approach to cooking fresh and diners can see what’s happening in the kitchen.”

Mr Ainsworth said Mad Mex was licensed and offered Mexican specialities such as margaritas, Coronas and wine.

“We also offer Jarritos, a brand of Mexican soft drinks,” he said.

Mr and Mrs Ainsworth moved to Albury during 1989 and started in Subway outlets in 2000.

They sold their health food store Healthy Life in West End Plaza three years ago and their Subway stores just weeks ago.

Mad Mex in West End Plaza seats 72 and opens daily from 10am.

Linda's cooking is just great; she cooks a lot of different dishes and she's prepared to experiment with ingredients.
