Wodonga TAFE patisserie students prepared a decadent high tea as a springtime celebration of culinary tradition to showcase their skills to the public in The Valleys Restaurant.
The third annual event was hosted and styled by students from Wodonga TAFE’s Diploma of Event Management program.
Hospitality and Events teacher Nikki McIntosh said this year’s high tea event was “modern, fresh and fabulous”.
“Our students have worked hard all year, developing their skills and the high tea gives them a wonderful opportunity to develop and present an event from initial concept and then follow it through to delivery,” she said.
“We were able to bring students together from our Hospitality, Events and Patisserie courses to take part on the day, and whether their roles were behind the scenes or front of house, they were collaborating to ensure this was a professional event.”
Wodonga TAFE's head cookery teacher Sarah Whitling said four students in the Certificate III in Patisserie made the most of the high tea setting to show off the patisserie skills they have developed throughout their course this year.
“It’s one of the highlights on their calendar,” she said.
The High Tea served a mix of sweet and savoury treats to about 60 people.
Food choices on offer included honey madeleines, macarons, lemon and almond tartlets, hazelnut crunch and spring fancies as well as a savoury selections of tartlets, petit sandwiches, spanakopita and house-made sausage rolls.
Certificate III in Patisserie students will also visit seven hospitality businesses at the forefront of their game in Melbourne on November 3.
Among those on the list will be Lune Croissanterie at Fitzroy, where queues still form out the door from dawn every weekend, Melbourne institution Brunetti and Le Petit Gateau, the brainchild of French pastry chef Pierrick Boyer.
For the final public event of the year TAFE students will also host a Paddock to Plate Market on November 9.
Bookings essential for the event, which runs noon until 2pm.
Wodonga TAFE is also taking enrolments for Certificate III in Patisserie from now until the start of the term in February.
