Former operators of hatted restaurant Tani Eat & Drink Rachel Reed and Hamish Nugent opened Reed & Co Distillery in Wills Street in mid-December.
Ms Reed said their Remedy Gin brand was influenced by their landscape.
“It’s an Australian dry gin flavoured with mountain pepper, eucalyptus citriodora, fresh pine needles, hazelnuts and honey,” she said.
Remedy Gin would be available nationwide within two weeks.
Ms Reed said they offered seasonally-inspired fare from their custom-built oven.
“We’re using Victorian meats cooked over the grill,” she said.
Sixpence Coffee also operates on the same site.
Reed & Co Distillery opens Wednesday to Saturday for lunch and Friday to Sunday for dinner.
Remedy Gin tastings are available Wednesday to Sunday, noon to 6pm.
