Mrs Elliot's family had a rocky history with kidney failure as both her father and her father's sister died after receiving kidney transplants.
She was able to receive a new kidney quickly in July thanks to her husband.
The lifesaving surgery meant Mrs Elliot would celebrate another festive season.
“This time last year I was anxious, teary and overwhelmed with anxiety that I might not be here for another Christmas,” she said.
“You start thinking about all the different scenarios.
“What a miracle it is for me to be alive now and to be feeling well.
“The day after surgery I woke up feeling fine, I felt instantly different.
“It's so hard to say thank you, words don't seem to be enough.”
Mr Elliot's kidney was not a match for his wife, but they took part in the Australian Paired Kidney Exchange Program.
The anonymous swap meant both Mrs Elliot and another person in need of a kidney were able to get the best match possible through the help of a loved one who was willing to donate.
Victoria set a national record last year - 117 donors and their families gave 369 organs accounting for almost 30 per cent of the national tally.
As the end of 2015 looms, 106 Victorians have donated organs helping 265 Australians receive a life saving transplant.
DonateLife Victoria state medical director doctor Rohit D’Costa said close to 1600 people were still waiting on the national transplant list.
“Typically families come together at this time of year and, although it is hard to have a conversation about people's after-death wishes, it’s important,” he said.
“We are asking people to make it known to family and friends if they wish to be an organ donor and register on the website.”
Family members will always be asked to confirm a person's wish to donate in Australia.
