An Alfred hospital spokesman said about 2am, a man in his 20s was airlifted from Albury with spinal injuries sustained during a pool accident.
The Border Mail understands Dempsey suffered a C4 vertebrae fracture.
The young Albury Tigers player has represented Australia in water polo and played in division two for Sydney University.
In 2014, he travelled to Turkey as part of a national team at the under-18 World Championships.
Dempsey had been nominated for the Young Achiever of the Year award multiple times and is well-known for his abilities on the Border and interstate.
There are three months remaining in the water polo season.
The Alfred Hospital spokesman said Dempsey remained in a critical but stable condition on Sunday afternoon.
