The South Albury-based speciality bakery started baking sourdough hot cross buns about three weeks ago in the lead-up to Easter.
Danish-born and Thurgoona-raised co-owner Thor Sonnichsen said they were now baking two different types of hot cross buns daily – traditional cranberry, peel and sultanas and Belgian Callebaut chocolate and candied ginger.
He said they might add a saffron and marzipan version this week in a nod to Scandinavian flavours.
“Hot cross buns aren’t traditional in Scandinavia but they have other things like ‘kanelbullar’ (cinnamon buns),” he said.
Mr Sonnichsen and his Swedish-born partner Filippa Nilsson opened Nord Bakery in Ebden Street in May 2015, offering traditional delicacies inspired by northern European countries.
Ms Nilsson said they were influenced by seasonal produce grown around the Border and North East.
She said they used organic and foraged fruit to inspire their range of jams and to flavour their sourdough breads and sweet baked goods.
“Beautiful people are always dropping in fruit to us when they have more than they can use,” Ms Nilsson said.
“Albury is such a lovely place.”
In another example of collaboration, Ebden & Olive co-owner Jodie Jones is making spiced butter to complement Nord’s hot cross buns.

Sourdough starter.
What's the biggest product discovery you have made in cooking?
Organic fruits from home gardens and foraged foods. When we moved back to Australia we started using more of these ingredients and baking’s a more rewarding process.
What is your recipe standby?
Sourdough every day.
What is your most unforgettable meal and where?
Filippa and I feasted on 15 courses at (Michelin-starred restaurant) Cinc Sentits in Barcelona. We were living in Norway at the time, meaning we could go to Spain for a weekend.
What's your most-used cooking utensil?
My hands.
What did you have for dinner last night?
Pork steak with horseradish and mash. Lovely with a stout beer.
What are you drinking?
Gin and tonic or stout beer.
