DYNAMIC hospitality team Tara Davis and Matt Fuller have come together again on their first joint project.
Head chef Davis, formerly Miss Amelie sous-chef, has joined front of house operator Mr Fuller, who opened Bistro Selle in Albury in mid-2017.
The pair worked together under hatted restaurant team Jodie Jones and Steve Carne at SourceDining in Albury, The Kitchen restaurant at Howlong’s Courthouse Hotel and Broadgauge in Wodonga over a decade.
“Jodie and Steve are big mentors of ours still,” Davis said.
“We’re taking the experience we gained with them and offering a more casual, modern European dining experience.”
Davis also worked for celebrity chef Jamie Oliver’s hospitality businesses including Fifteen in London.
Fuller said the wine list matched the contemporary bistro fare.
What's your favourite dish?
Asian flavours; anything from Thai curry to Vietnamese Banh mi.
What are the staples in your pantry?
Kewpie mayonnaise, pasta, olive oil, Murray River pink salt, white pepper.
What's the biggest product discovery you have made in cooking?
Infused vinegars like pomegranate and other fruits for dressing salads and adding depth to sauces. I’m big on flavour and well-seasoned food.
What's your secret vice?
What is your recipe standby?
Bread; it’s simple but so versatile. I like classic Italian focaccia with the perfect dough and crust with salt, rosemary and garlic on top.
What is your most unforgettable meal and where?
The Ledbury in Notting Hill in London, where I did its stagiaire program (work placement to experience the 2 Michelin Star kitchen). I had a 10-course meal and to see the full program from the diner’s perspective was amazing; from the 20 chefs processing it to the waiters and wine staff.
What's your favourite cooking utensil?
Spiral whisk for emulsifying sauces.
What's in your kitchen toolkit?
Scales, thermometer and notebook – I like to write down ideas when inspiration hits.
What did you have for dinner last night?
Staff meal of braised lentils, harissa chicken and yoghurt.
What are you drinking?
Coffee, Berocca and beer.
