Miller started working in the kitchen at The Albury Club six weeks ago.
Having been sous chef at The Terrace Restaurant at All Saints Estate, Brown Brothers and Provenance, Miller was ready to branch out on his own.
His new catering company Milkin Kitchen is a combination of his surname and his wife Erica’s maiden name, Rankin.
“I love Italian cuisine but I also love Japanese and Asian flavours from working with Michael Ryan (Provenance),” he said.
Born in Melbourne but raised at Rutherglen, Miller worked at Donovans in Melbourne before returning to the North East.
Together with Erica and their children, Darcy, almost 3, and Isabel, 10 months, Miller has settled at Rutherglen.
“We’ve got the Murray River 10 minutes away and the mountains in reach and we’re in the food bowl,” he said.
Former Brown Brothers executive chef Douglas Elder will join Milkin Kitchen on some events in the coming months.
“Doug was an awesome mentor about six years ago,” Miller said.
“It will be great to work with him again.”

What is your earliest cooking memory?
I used to cook pizza toast for anyone who walked in the house when I was about Darcy’s age.

At the moment, snow peas, Brussels sprouts and cauliflowers.
Which six people would you invite to dinner?
David Chan, Analiese Gregory, Aaron Turner, Tiger Woods, my wife and Ben Shewry.
What are you bingeing on TV? If anything.

Italian sausage and broccolini from the garden.

What is your favourite foodie ritual?
My Nan’s pavlova; she was still making it up until last year when she was 95. My younger sister Lauren has taken over that tradition.
