The Mauritius-born head chef at Hollywood’s Pizza Bar said she looked forward to spring and all of its fresh offerings.
After 10 years on the Border, she still feels the Wodonga winters.
“Spring is my favourite season,” she said.
“I love all of the fresh salads and local produce in the region.”
Having been head chef at Hollywood’s in Wodonga for about 18 months, Surette had previously worked for Hollywood’s Pizza Bar and Wodonga Golf Club under the former owners.
Steven Hams and Jennifer Waugh bought the award-winning restaurant about two years ago.
They have some big plans in store for spring after they bought a new Italian wood-fired oven recently.
They plan to create a new menu and dining space within the venue that will offer authentic wood-fired pizza, Italian entrees and Italian desserts.
New online ordering is now available.
Delivery to Wodonga and surrounds is also available from Thursday to Saturday.
What's your favourite winter dish?
I cannot choose one! I love seasonal dishes and especially salads and seafood.
What's your favourite season?
Spring
What are the staples in your pantry now?
Pasta is my specialty. I also have garlic, thyme, coriander and parsley.
What is your earliest cooking memory?
Every special occasion in Mauritius we’d have a roast and veggies. Every family would bring something to add to the meal.
Which ingredients do you grow yourself?
Herbs such as thyme, mint and parsley. I have tried to grow basil without much luck.
Which six people would you invite to dinner?
My friends – Vannia, Ketty, Nicholas, Annabelle, Estelle and Sandrine – they all cook and have ties to Mauritius. I met them all since I came out 10 years ago and we all get together once a month.
What is your favourite foodie ritual?
I love trying new restaurants and visiting the wineries around the region.
What are you bingeing on TV? If anything.

What did you have for dinner last night?
Steak with mushroom sauce, mash and broccolini
What are you drinking at the moment?
Latte in the morning and a glass of shiraz with dinner.
