SAVOUR FLAVOUR: Beetroot falafel, ancient grains, rocket and feta.
- 150g falafel mix
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp baking powder
- 2 tbsp white sesame seeds
- ¼ cup chopped mint
- ¼ cup chopped flat leaf parsley
- ¼ cup diced red onion
- 80g cooked beetroot
- ¼ cup water
- 1 cup frying oil

- 1 cup cooked ancient grains
- 80g wild rocket
- 2 tbsp toasted sesame seeds
- 1 small red onion, finely sliced
- ¼ cup chopped mint
- ¼ cup chopped parsley
- 100g goat’s feta
Combine falafel mix, cumin, coriander, baking powder and sesame seeds. Blend mint, parsley, red onion, water and beetroot in a food processor. Add beetroot mix to falafel mix. Heat oil in a large frying pan. Place heaped tablespoons of the mixture in the pan, flatten slightly, cooking 1-2 minutes each side. Combine salad ingredients and dress. Divide salad between four bowls. Top with feta and falafels.

- 1 tbsp honey
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice
- 4 tbsp olive oil
- Sea salt and cracked black pepper
