THE team behind Corowa eatery Doc Yarrum has opened a second cafe in Albury.
Timber Albury opened about two weeks ago in the Ritz Arcade, previously occupied by Brown Husk.
Their health-conscious dishes and comfort food staples have found a popular following.
Timber Albury head chef Victoria Leov, who hails from Culcairn, said patrons appreciated the focus on fresh and flavoursome food.
Having studied culinary arts at William Angliss Institute of TAFE until June, Leov said she was inspired by the use of spice in many cultures.
“The menu is fresh and modern with some Asian infused favourites,” she said.
Timber Albury opens Monday to Friday, 6.30am to 3pm, and Saturday, 7.30am to 3pm.

A filling salad with grains and dark, green leafy vegetables.
What’s your favourite season?
What are the staples in your pantry now?
Fruit and vegetables, quinoa, wild rice, brown rice, cous cous, extra virgin olive oil, Himalayan sea salt, which I also like in sweets or to top a dark chocolate tart, for example.
What is your earliest cooking memory?
Helping mum make choc chip cookies and then stealing the choc chips. I later found out she knew I’d taken them but she never said anything!
What is your favourite foodie ritual?
I always have a smoothie bowl at the weekend. On week days I usually grab a banana and I’m out the door!
Which ingredients do you grow yourself?
I’ve got a good selection in the ground at the moment: corn, all of the herbs, tomatoes, pumpkin, beetroot, snow peas and beans.
Which six people would you invite to dinner?
My mum (Pamela), Jordi Roca i Fontané (pastry chef of the restaurant El Celler de Can Roca in Spain), Antonio Bucco, Gordon Ramsay, Tess Begg (YouTube) and Joanie from The Bite Shot (Food Photography Education site).
What are you bingeing on TV? If anything.
Ambulance Australia. My sister is a paramedic (in London) and the other is a nurse.
