The indigenous-themed restaurant, Aunty Gloria’s, will open on Friday night at the Wodonga Services Club.
Aunty Gloria’s head chef Sonny Morgan said the restaurant was the highlight of his hospitality career.
“It’s been a long-time dream of mine,” Morgan said.
“I’ll be offering kangaroo and barramundi and I will be sourcing other indigenous game meat.
“It will be traditional-style cooking with some modern interpretations worked into the menu.”
Having grown up at Mildura, Morgan said he was the only indigenous student in a Catholic primary school.
“I spent a lot of time at other kids’ places and their family cooking inspired me too,” he said.
“I also learnt a lot from my aunties and grandmothers about traditional indigenous cooking.
“I’ll be using all of this learning from my past to make my restaurant dream a reality.”
Aunty Gloria’s will operate fortnightly in the Wodonga Services Club, formerly known as the Vietnam Veterans and Associates Club.
Wodonga Services Club vice-president David Swain said the restaurant would be a welcome addition to the family-friendly club.
He said the club rebranding reflected a desire to include more of the community beyond its veteran and army base.
“The restaurant is a great opportunity for Sonny and the club,” he said.
Having lived in Wodonga for almost two decades, Morgan said he had pursued his interest in commercial cookery.
He had also done some mentoring in schools.
“It’s most important to sit down and listen to each other’s stories,” he said.
“Wodonga Services Club is a family club, the name Aunty Gloria’s suited that atmosphere and it takes me back home.”
Aunty Gloria’s will be launched on Friday night with a smoking ceremony, dance troupes, didgeridoo players and storytelling in the first hour.
It will open at 2A Havelock Street on alternate Fridays, 5.30pm-9.30pm.
