Nannini Ristorante & Pizzeria will roll out its pizza restaurant only to the public on Thursday in a three-stage opening of the Townsend Street venture.
Italian-trained pizza maker Damiano Zaffi will offer his fresh take on the Mediterranean staple.
Zaffi said he used only quality Italian and Australian ingredients to make authentic Italian pizzas attuned to the Australian palate.
“The quality of the ingredients is very important,” he said.
“We use an Italian model Kuma Forni woodfired/gas pizza oven; we use wood for the flavour and gas because it’s easier to control.”
Born-and-bred in Bologna, Zaffi moved to Sydney in 2016 to pursue his culinary career after being trained in pizza making in Italy.
“The stretching of the dough is quite complicated; it requires many months of training,” Zaffi said.
Nannini Pizzeria menu highlights include a Salsiccia (housemade white wine sausage with rosemary potatoes, red onions and Montasio cheese); Cheese Lover (Fior di latte, Gorgonzola, provola, Montasio, pecorino, rocket and balsamic vinegar); and a Carbonara (Fior di latte, crispy ham, egg and black pepper). A Damiano Special allows the chef to choose four to six types of pizza to share with a group.
Zaffi will offer workshops from late February.

My grandmother’s lasagne. Lasagne originates from near my hometown of Bologna.
What's your favourite season?
Summer; maybe it may be spring in Albury though!
What are the staples in your pantry now?
Good flour; Caputo flour from Naples is tasty and easy to use.
What is your favourite cooking memory?
Studying to make pizza in Italy when I was 22.
Which ingredients do you grow yourself?
I have just moved to Albury but the restaurant will have a herb garden on site.
Which six people would you invite to dinner?
My five best friends in Sydney, four are working as chefs and one is a waiter; and Italian chef Giuseppe Migliaccio.

Homemade pasta fettuccine with mushroom ragu
