Roasted blueberries
- 1 cup blueberries
- 2 tbsp sugar
- 1 tbsp lemon juice
- 2 tbsp Essential Ingredient Sumac
Bircher
- 3 cups rolled oats
- 3 cups evaporated coconut milk
- 2 apples, grated
- 1 cup blueberries
- 1 cup cold water
- 2 tsp cinnamon
Topping
- ¼ cup pepitas
- ¼ cup sunflower seeds
- 1 cup roasted sumac blueberries
Method
Preheat oven to 190 degrees. Place blueberries, sugar, lemon juice and the sumac in a bowl and toss to coat. Place on a lined baking tray and roast in oven for 12 minutes or until fragrant and the skin has begun to split. Remove and cool. To make bircher, combine all ingredients in a bowl, cover and refrigerate overnight. To serve, scoop bircher into a bowl, top with sunflower seeds, pepitas and roasted blueberries.
