After bowing out of the finals race in round 17 last season, coach Myles Aalbers said the club had been specific with its recruiting.
"We're really happy to pick up Kurt and Josh this late," Aalbers said.
"Kurt has moved to town and he just came about through a family connection at the club.
"We'll be able to play him at both ends of the ground.
"Josh has a super kick on him and he's another really good option for us."
Originally from Narrandera, Jensen played in the Riverina league before moving to Geelong while Star was a solid performer in the Tallangatta and District league last season.
The Giants have also picked up Tom Holman, Jack Duck, Nicholas Kohlhagen, Daniel Gilchrist and Dylan Braut.

A fit Ryan Lavery will also be like a recruit.
"Our training standards have lifted on last year and hopefully we can build on the last three seasons," he said.
"Our depth is a lot better particularly around the midfield."
Rand-Walbundrie-Walla has lost Mitch Thomas, Kai Davies and Sam Hargreave to the Ovens and Murray.
