Together with wife and business partner, Marion Hansford, Gilchrist has been a trailblazer for homegrown ingredients at The Pickled Sisters Cafe at Wahgunyah for the past 15 years.
Born and bred in Glasgow, Gilchrist was drawn to cooking from a young age, surrounded by his mum's comfort food.
"She was always making jams and gingerbread," he said.
Classically trained in Scotland, Gilchrist met Marion working at a seafood restaurant on the Isle of Arran. They moved to Rutherglen in 2004 with their young sons to take over the cafe.
The Pickled Sisters Cafe will offer Honey and Muscat Glazed Confit Duck; Caramelised Pork Belly; Medallions of Chicken; and Rich Chocolate Torte matched to Cofield Wines during the Tastes of Rutherglen festival this weekend. Beers, Burgers and Bubbles will run on Friday from 5pm.
Autumn cooking school classes include Autumn Harvest (May 3) and Pickles, Pies and Pastries (May 22).
What's your favourite autumn dish?
Duck and mushroom risotto with Taleggio
What's your favourite season?
Summer. I've had enough cold weather in my lifetime. I think summer fell on a Tuesday last time I was in Scotland!
What are the staples in your pantry now?
Kewpie Mayonnaise, Sriracha sauce, tinned tuna and homemade raspberry jam.
What is your earliest cooking memory?
My mum making tablet (Scottish confection) when I was a child; that's probably where my sweet tooth comes from.
Which ingredients do you grow yourself?
We have lots of fruit trees at home; quinces, plums, apricots, apples, peaches, oranges and limes. We grow all the fresh herbs we can.
Which six people would you invite to dinner?
Billy Connolly, Steve Martin, Robin Williams, Paul McCartney, Stuart MacBride and F. Paul Wilson.
What are you bingeing on TV? If anything.
Outlander. And I'm binge-reading Stuart MacBride's Logan McRae books.
What did you have for dinner last night?
Mexican chicken burgers - taste-testing for our Bubbles, Burgers and Beers event.
What are you drinking?
I'm enjoying a Furphy. And on a hot day punch with ginger ale, lemonade, orange juice and mint.
