Authorities have successfully applied to keep Craig Anthony Turner, 46, behind bars amid concerns for the risk he poses the community.
Turner has priors for using a firearm, escaping custody armed with a loaded gun, attacking paramedics, using a shotgun to prevent a police investigation, and a string of other offences.
The victim was hospitalised with multiple facial fractures.
Turner also threatened another stranger and held a bottle to the back of his neck.
A judge said the facts "painted a picture of a confused and irrationally thinking drug affected individual" and noted his lack of remorse or insight into his offending.
He has previously firebombed a police officer's home.
Turner was released on parole in January last year, and was living in an Albury caravan park, but refused to accept any responsibility for the incident.
He was combative and refused to stop smoking cannabis, refused to see a doctor for a mental health assessment, and "flat out refused to complete any programs" for rehabilitation.
His parole was revoked in May and was due to expire on Sunday, but Turner will remain in custody for another month due to the risk of him committing further crimes.
Authorities hope to have Turner remain in custody for a year with the matter to return to court at a later date.
Justice Geoffrey Bellew said he had "considerable disquiet" about Turner's ability to be managed in the community.
