The Food Truck Carnival Company will bring 14 food trucks to Hovell Tree Park over four days.
Food Truck Carnival Company business manager Peter Caldwell said the company was thrilled to bring the carnival to Albury for the first time.
"Festival setup has been great and we are really excited to have such a great area at Hovell Tree Park," he said.
"The weather is looking great and we can't wait to get things started.
"The council has been a huge help with pointing us in the right direction with regards to suppliers as we really try and pump money back into the local community where we can."
Mr Caldwell said Albury would likely become part of the company's regular venues.
"We are looking to include Albury on our annual regional tour and have been looking to replace our successful Yarrawonga carnival for some time and feel this is a great fit," Mr Caldwell said.
Among the food trucks coming to Albury on Thursday night will be The Rib Crib, Curry Up Now, Lebanese Street Food, The Roaming Grill, The Smoke Pit and Pressed Waffle Bar.
There will be carnival rides, a bar and live music.
The food truck festival runs 5pm to 10pm Thursday and Friday, noon to 10pm on Saturday and noon to 9pm on Sunday.
A big fireworks display will be held on Saturday at 9.30pm.
Entry to the carnival is free but a gold coin donation will go to a local charity yet to be decided.
