About 34,500 people attended the four-day festival in Hovell Tree Park from Thursday.
Food Truck Carnival Company business manager Peter Caldwell said the group was thrilled with the turnout.
"We were hoping for 20,000 people but expected 15,000 to 20,000," he said.
"It far exceeded our expectations.
"The locals supported it immensely; our vendors sold out over the weekend and had to go scratching around for more ingredients."

Mr Caldwell said Albury would be a fixture on the regional carnival tour.
"We hope we might be back later this year but, if not, then early next year," Mr Caldwell said.
"Albury will be part of our annual tour for sure."
