Ingredients
- 150g butter, room temperature, and 20g extra butter, melted
- 200g sugar
- 2 eggs
- 1 tsp vanilla essence
- 1 1/2 self-raising flour, sifted
- 3/4 cup Greek yoghurt
- 2 Granny Smith apples, peeled, cored and cubed
- 1 tsp ground cinnamon
- 1 tbsp sugar
Method
Preheat oven 150 degrees (fan-forced).
Beat butter and sugar together until creamy.
Gradually add eggs and vanilla essence.
Fold in flour and yoghurt until smooth.
Pour into a greased cake pan, top with apples, pour melted butter over and sprinkle with cinnamon/sugar mix.
Bake for one hour or until an inserted skewer comes out clean.
Cool in the tin for 30 minutes before turning onto a wire rack.
Serve warm with vanilla ice cream.
