Arresting officers feared for their safety and took evasive action to get out of the way of Luke Anthony Tyrell as he walked to the hallway.
At one point, Tyrell lowered the knife and pointed the weapon at one of the police.
Resisting arrest with a knife, magistrate Rodney Brender said, was "a pretty serious offence. Isn't it?"
Tyrell's solicitor agreed it was.
Mr Brender said Tyrell was clearly threatening the officers with the knife, not just holding it to his throat.
The 25-year-old Lavington man, in Junee jail bail refused, pleaded guilty to two sets of matters.
The first involved charges of use offensive weapon to prevent lawful detention and resist police, while the second was a single charge of resist police.
Police withdrew a related charge of escape police custody.
They have told Albury Local Court that Tyrell had "a history of violence offences" for which he had served time in jail.
Police armed with three arrest warrants went to Tyrell's home in Woomera Crescent on February 6 just after 7pm.
They were met at the front door by his mother, who was quizzed on his whereabouts as he had been actively avoiding police for the previous couple of months.
His mother said Tyrell had not been there for about four weeks, but she did not object when police asked permission to enter the home to search for him.
They looked through the house room-by-room, with one of the officers finding Tyrell "hiding behind the shower curtain with both his hands clenched together up towards the bottom of his chin".
When one reached for his handcuffs, Tyrell took a step towards leaving the bathroom.

It was then that they saw the knife.
Soon after, one of the officers took hold of Tyrell's right wrist and elbow.
There was a short struggle that left Tyrell with a stab wound under his left armpit.
He will be sentenced on July 1.
