Now working on the team at Pentolina in Melbourne CBD, Olivieri shared skills gained from top kitchens in Italy, London and Montreal as well as Melbourne's Bottega with Wodonga TAFE students.
"If you put semolina on the top and bottom of your pasta, after you cut the ravioli, it should all lift off in one long piece," he said.
Five industry professionals shared their skills and knowledge with students in a series of masterclasses at Wodonga TAFE this week.
It also featured Morgan Hipworth (Bistro Morgan), Alex Dawkins (The Goods Shed Wodonga), David Kapay (Miss Amelie) and Geoffrey Michael (Geoffrey Michael Patissier).
The industry professionals worked with students enrolled in the Certificate II in Kitchen Operations at Wodonga TAFE to make a series of signature dishes.

Wodonga student Julienne Badesire said the masterclasses had been invaluable.
"All of the chefs have their own techniques, different ways to manage time, different ways to keep their cooking area clean and they also have different ways they communicate with others," she said.
Wodonga TAFE Cookery and Bakery teacher Sarah Whitling said it was an exciting opportunity for students.
"We are very pleased to provide this opportunity locally for our students to learn from well-known industry professionals - from the very industry that our students are starting their careers in," she said.
