Having moved to the North East 13 years ago to run The Terrace restaurant at All Saints Estate, Duggan has taken up teaching in recent years.
He has trained commercial cookery apprentices at Wodonga TAFE for the past three years.
"I always enjoyed having apprentices on the team," he said.
"It feels good to be giving back some of my knowledge to future chefs."
Having settled at Beechworth with partner Lastari and their children Patrick, 16, Annisa, 14, and Henry, 12, Duggan worked at Gapsted Wines Restaurant after his five-year stint at The Terrace.
"I started out as a chef at 16 so I've done it all my life," Duggan said.
Yesterday Wodonga TAFE commercial cookery students presented the first in a series of themed lunches at The Valleys Restaurant.
It was a three-course menu with a native Australian produce twist.
Future lunch themes will include Omakase on July 30 - a six-course Japanese fusion degustation; Traditional French Bistro on August 13; Moroccan Valleys on August 27; and The Smoked Valleys on September 10.
Bookings are essential via Wodonga TAFE.
