Having grown up in Naples in Italy, Fragliasso's approach to cuisine reflects her rich familial and national traditions.
The Nannini Ristorante & Pizzeria trainee chef tells a story on the plate through her choice of ingredients and how she puts a dish together.
"I love cooking; it's my passion," she said.
"My passion is making pasta; I make it twice a day, every day!"
Having married in Albury in March 2018 with an Italian wedding ceremony in October 2018, Fragliasso settled on the Border with her Italian-born husband.
"It was a day-long festival in Italy," Fragliasso said.
Menu highlights include traditional arancini (stuffed with bolognese and mozzarella); Gnocchi al Prosecco (gnocchi with a tomato and Prosecco sauce, butter and basil) and Ortolana pizza (tomato, mozzarella, seasonal grilled vegetables, olives, rocket and toasted hazelnuts).

What's your favourite dish?
Spaghetti Positano; it's from the Amalfi Coast.
What's your favourite season?
Summer. There's more humidity in Italy; I miss the sea but I really like Albury.
What are the staples in your pantry now?
Pasta in all fashions, in Italy we eat pasta every day. I also keep flour for making pasta and semolina.
What is your earliest cooking memory?
Cooking with my mother and Nonna Maria. My grandmother made small Italian squid in sugo. I was four years old and I remember it vividly.
Which ingredients do you grow yourself?
Basil, parsley and broccoli at home in our West Albury garden.
Which six people would you invite to dinner?
My family living in Italy and MasterChef Italia's Antonino Cannavacciuolo.
What is your favourite foodie ritual?
On my day off I like to make spaghetti with oil, garlic, chilli and Italian pork sausages with broccolini.
What are you bingeing on TV? If anything.
Nothing
What did you have for dinner last night?
Duck involtini with ham and mozzarella and sage with burnt butter in a vegetable broth and baked potatoes cooked in beer - it tastes really nice!
What are you drinking at the moment?
Moscato
