South Albury businesses Almar Organics and The River Deck Cafe will team up for the special event on Friday.
Almar Organics co-owner Clinton Hall said the dinner had a sustainability bent.
"Firstly, we wanted a sustainability focus working with our regenerative farmers locally and using secondary cuts of meat," he said.
"Secondly, we wanted to link our community with the producers of sustainable food."

Wymah Organic Lamb and other organic producers will feature on the four-course menu designed by The River Deck head chef Ludo Baulacky.
Dishes have been matched to wine by Pennyweight Winery and Castagna.
The dinner at The River Deck Cafe starts at 6.30pm.
