The man eventually had to scale a back fence to get away from Cassandra Graham, who screamed at him while following him around the house.
He waited for police in a nearby park, while Graham's daughter, 11, took her four-month-old brother to a neighbour's house to keep him safe.
Graham, 31, of Boomerang Drive, was supposed to have appeared before Albury Local Court this week on a single charge of assault occasioning actual bodily harm.
But she failed to do so, resulting in magistrate Rodney Brender deciding he had no option other than to convict her and to issue a warrant for her arrest.
IN OTHER NEWS:
At the time of the incident on November 27, Graham had been in a relationship with the victim for about seven years.
Graham, who the court heard was on maternity leave from her job as a traffic controller, and the victim began to argue at home about 6.30pm.
After several minutes of bickering, Graham declared: "I'm getting a knife."
She walked into the kitchen, then returned seconds later armed with a knife with a 20-centimetre blade.
"The accused approached (the victim), holding the sharp edge of the blade against the shirt sleeve of his upper right arm with force," police said.
"(He) didn't move. The accused continued to yell at him.
"The four-month-old child was in the room as this was unfolding."
As soon as he got the opportunity, the victim went into a bedroom to call the police. Graham followed, though left the room as he finished the call before returning again.
She resumed yelling at him, so he fled to the back yard just as Graham's daughter returned home. The girl stepped outside to witness her mother's antics.
Soon after, Graham left the house.
The victim suffered a one-centimetre laceration to his arm, though there was no cut to his shirt.
Graham was arrested the next day.
