Jaffa Pancakes
Oranges: Bring large pot of water to boil, add 4 oranges (submerged). Cook 5-8 minutes to soften skin. Reserve 2 cups of boiling liquid. Add 2 cups caster sugar and 1 cup orange juice to another pot. Bring to boil to dissolve sugar and create a syrup consistency. Slice oranges, line single layer on baking tray with paper. Drizzle over a little syrup.

Bake in oven for 5-10 minutes at 180 degrees.
Meringue: 4 egg whites, 1.5 cups caster sugar, 1 tsp lemon juice, 2 tsp icing sugar.
Beat with whisk attachment in stand mixer the egg whites, sugar and juice, on number 8 for 10 minutes. Please use a timer as whisking time is important! Gently fold in icing sugar, be careful to not over-mix and deflate aeration.
Place small rounds of meringue onto lined baking tray. Bake for 45-60 minutes with oven at 100 degrees.
Ganache: 1l cream, 500g dark chocolate
Bring cream to boil. Add chocolate while whisking constantly until melted and remove straight from heat.
