Victor Supper Club shares recipe for Shanklish dish

  • Shanklish, home-made or store bought
  • Oxheart tomatoes
  • Spring onion or salad onion
  • Aged balsamic or glaze
  • Dukkah
  • River salt
  • Extra virgin olive oil

Shanklish is semi-hard cheese from the Levantine cuisine, usually made from cow's or sheep's milk yoghurt. Here at Victor Supper Club we make our own fresh Shanklish and we use oxheart tomatoes and new season onions. Use the ripened tomatoes and slice thin. Arrange into a plate, forming a disc. Season the tomatoes with salt, olive oil and a drizzle of aged balsamic or balsamic glaze. Scoop the fresh cheese on top. Garnish with dukkah, shaved new season onions or spring onions. Drizzle more olive oil and garnish with parsley. Enjoy with toasted Lebanese bread.
