That meant when a friend asked her to recreate the plastic bin caddy used for green waste in the three-bin system, Docker thought 'there's something in this'.
These colourful bins are among the products being sold at the Table Top potter's pop-up shop in AMP Lane, Albury.
"I've never done something like this before, but thought I'd give a pop-up shop a go," Docker said.
"The feedback has been really positive.
"People are really wanting to buy locally for Christmas this year.
"It's great to buy sustainable options as well."
Ceramic takeaway coffee cups, which Docker supplies to a few coffee shops, are another item on offer.
"They're by far my most popular item," she said.
"Almost every single one is individual - I use them to trial different decoration techniques.
"I've also got planter boxes and the bins, and oil paintings by Nat Ward.
"She is a good friend and was actually the person who asked me to create the green waste bin.
"Then I started making them for a few other people.
"It looks a lot nicer on your bench."
Albury Council and MAMA have been supportive of the idea and sold the ceramic bins in the gallery's gift shop earlier this year.
Docker has been creating pots for more than 30 years and has recently turned a caravan into a shop for her products at her base in Table Top.
Docker said she was looking forward to getting back behind the pottery wheel, but would consider future pop-ups.
"This has been a big year for me; I decided to leave the shop I was involved in in Beechworth," she said.
"I wasn't sure how I would go being completely on my own, but it's been better than I thought.

The pop-up shop is running from 10am to 5pm Monday to Saturday and 10am to 2pm on Sunday in AMP Lane, near Target.
It will be set up until December 15.
