It's a perfect sweet treat over the festive season.
As a bonus, it's gluten-free and dairy-free, covering those bases.
Almond Amaretti
(Gluten-free and dairy-free)
Ingredients
- 5 egg whites
- Pinch salt
- 4 1/2 cups almond meal
- 1 1/2 cups caster sugar
- 1 tsp vanilla bean
- 2 tbsp extra caster sugar
- 2 tbsp icing sugar
Method
Preheat the oven to 160 degrees Celsius.
Lightly whisk egg whites and salt.
Add the rest of the ingredients (except the extra sugar/icing sugar) and mix to combine.
Portion into 1 tablespoon balls, coat in extra sugar, then icing sugar.
Place on baking tray and lightly flatten.
Bake at 160 degrees for 20 minutes.
Makes about 21.
Enjoy with a short black or a flat white.
